Peanut Butter Oatmeal Chocolate Chip Cookies

Check these cookies out! I am dubbing these the "everything" cookies, since they have every delicious ingredient that could go into a cookie in them - peanut butter, oatmeal and chocolate chips. I already know these chewy cookies are going to become my new favorites.

Peanut Butter Oatmeal Chocolate Chip Cookies
adapted from the bankrupt vegan
makes 2 dozen cookies

1 1/4 C flour
4 tsp ground flaxseed
1 C oats
1 C brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1/4 C canola oil
1/2 C agave
3/4 C peanut butter
1 C vegan chocolate chunks


Preheat oven to 350 F. Mix the oil, agave, vanilla, and brown sugar together. Add the peanut butter and combine. Add in the rest of the ingredients and stir well.
Scoop the cookie dough onto a greased cookie sheet and bake for 9-11 minutes until just crisp around the edges. Let cool and enjoy!

Snickerdoodle Cookies

We've had some fun weather here in Colorado over the past week... I'm looking at almost a foot of snow out of my window right now. Even though we really need the moisture, I'm still not a fan of the snow at all and have no desire to go out and do anything in it. My solution to my snowed in day was (of course) to start baking! I realized I had not yet attempted to bake the fun and classic snickerdoodle cookies, so I set out to change that.

Snickerdoodle Cookies
makes about 2 dozen small cookies

1/2 C vegan butter
3/4 C sugar
1/4 C almond milk
1 tsp vanilla
1 3/4 C flour
1/4 C cornstarch
1 tsp baking powder 
topping:
1/4 C sugar
1 1/2 Tbsp cinnamon

Preheat oven to 350. Soften vegan butter and with an electric mixer beat it with the sugar. Add in almond milk and vanilla and mix again. Whisk the flour, cornstarch, and baking powder together in a separate bowl, then add to the wet ingredients and mix well.

Combine the sugar and cinnamon on a plate and stir. Roll the cookie dough into balls and then roll through the cinnamon sugar mixture to coat. Place on a greased cookie sheet.
Bake for 10-12 minutes then let cool.

Note: My cookies didn't really expand that much, so if you want larger cookies you can make the dough ball bigger.

I was actually happy that these didn't spread out too much in the oven, because they ended up being cute little round bite size cookies. Simple and tasty with a cinnamon sugar coating, these cookies are perfect for any occasion. I hope you enjoy!

Frosted Heart Sugar Cookies

Happy Valentines Day to all my fabulous readers! I wanted to share these fun heart shaped cookies with you today in honor of the holiday of love.

I got it in my head that I wanted to make heart cookies and so I made it my weekend mission to find a heart-shaped cookie cutter and get down to business. My original plan was to make simple sugar cookies and use them to top my vanilla cupcakes with chocolate buttercream frosting, but once I had my cupcakes done I realized I didn't want to smoosh the pretty frosting down with a cookie. I also had some frosting leftover from the cupcakes so I decided to frost and sprinkle the cookies too! It turned out to be a pretty good plan, I think.

Frosted Heart Sugar Cookies
makes about 2 dozen small to medium cookies
 
1 C flour
1/2 C sugar
1/2 C vegan butter
1 tsp baking powder
1 tsp vanilla extract
optional: chocolate frosting recipe here, sprinkles


Preheat oven to 350 F. With an electric mixer, cream the butter and sugar together. Add the vanilla and mix. Sift the flour and baking powder then mix into the butter mixture until a dough if formed. Place in plastic wrap and refrigerate for 1 hour.
Roll the dough out and cut with the cookie cutters of your choice.
Bake for 12-15 minutes and let cool before topping with frosting and sprinkles.

These cookies might not be the neatest or prettiest things I've ever made, but as long as they taste good I don't mind! Are you a fan of frosted cookies or do you prefer them plain? Personally I think sprinkles make everything a little more fun.

Spritz Cookies

It's not the holidays in my mind until these Spritz cookies come out of the oven. My Mom and I got together for our traditional Swedish baking fest, and my main goal of the day was to successfully veganize these family favorite cookies.

These cookies are so simple to make, and work best if you have a cookie press. You could make these into any shape, but over the years we have perfected these little circle wreaths and find they come out the best.

Spritz Cookies
adapted from love like a vegan

2 1/2 C all-purpose flour
1/2 tsp salt
3/4 C sugar
1 C vegan butter
1/2 C plain soy yogurt
1 1/4 tsp vanilla extract
variation - use almond extract instead of vanilla

Preheat oven to 350 F.

With an electric mixer, cream together the sugar and butter. Add the soy yogurt and vanilla, and mix well. Sift in the flour and salt and mix until a dough forms.
Put your dough into a cookie press and form cookies onto an ungreased cookie sheet.
Bake for about 10-12 minutes until lightly browned. Watch carefully so they don't start to burn.

Cranberry Almond Granola Cookies

Welcome Virtual Vegan Potluckers!

I am so excited to be participating in the virtual vegan potluck again. This time there are over 100 bloggers from all over the world sharing everything from appetizers to main courses to desserts.



If you've visited my blog before, you know that I'm no stranger to dessert, and so that is what I'm bringing to the pot luck today! Last time I brought a salad, and even though I do love a good salad, in my kitchen cookies totally win every time. Sorry brussels sprouts, I still love you.


Cranberry Almond Granola Cookies

6 Tbsp vegan butter
3/4 C sugar
1/4 C applesauce
1 tsp vanilla extract
1 C flour
1/2 tsp baking soda
1 C natural granola
1/4 C almonds, chopped
1/4 C dried cranberries

Preheat oven to 300 F.

Combine butter, sugar, applesauce and vanilla with an electric mixer. Add in the flour and baking soda and mix again. Gently stir in the granola, chopped almonds, and cranberries.
Drop rounded spoonfuls onto a baking sheet and bake for 15 minutes or until golden brown.
Let cool and enjoy!


These cookies were delicious! I was almost out of ideas after all those vegan mofo posts, but I had some granola to use from the last food swap, and these were the perfect thing. I hope you enjoy them!

No Bake Chocolate Oatmeal Cookies

As a part of Vegan MoFo I decided to dedicate my Thursday posts to recreating my family's favorite recipes - vegan style. My hope is that no one would be able to taste the difference!






I thought I'd start off my family recipe recreations with these no bake chocolate oatmeal cookies. These are THE cookies. You know, those ones that are made every year for holiday cookies, for any bake sales, and whenever you just need cookies that are guaranteed to come out right.


No Bake Chocolate Oatmeal Cookies
2 C sugar
6 Tbsp cocoa powder
1/2 C almond milk
1/4 lb. vegan butter
2 1/2 C. oats
1/2 tsp vanilla

Add the sugar, cocoa, almond milk, and vegan butter into a sauce pot and boil for 2 minutes while stirring.
Let cool slightly and mix in the oats and vanilla.

Drop spoonfuls onto wax paper, let cool and harden. (Place in fridge if needed to let cool.)
Store in a container at room temp or in the fridge.


I think this recipe originated from my Grandma, but my Mom made them all the time when I was growing up. We also called them "Chocolate Drop Cookies" since you drop them onto the wax paper. They are simple and quick, and are super chocolatey!

Pear and Golden Raisin Cookies

I'm so happy we've connected and become friends through the magic of the internet. Oatmeal Chocolate Chip Squares


Most of the time I don't need an excuse to eat chocolate for breakfast. Obviously. 
These little oatmeal squares are perfect though. They are filling, with a bit of chocolate, but are not overly sweet. More like a soft granola bar than a cookie. 
 


 Oatmeal Chocolate Chip Squares
makes 16 squares, adapted from good clean food

2 C flour
1 C rolled oats
1/2 C sugar
1 Tbsp ground flax
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/3 C almond milk
2 tsp vanilla
1/4 C maple syrup or agave
1/2 C applesauce
1/2 C vegan chocolate chips

Preheat over to 350 F.

In a large bowl whisk together the flour, oats, sugar, flax, baking soda, baking powder, and salt.
Add in the almond milk, vanilla, maple syrup, applesauce and the chocolate chip and stir to combine.
Spread evenly into an 8 by 8" pan. Bake for 25-30 minutes. Cool completely then cut into squares.
 

I enjoyed these squares for breakfast and snacks throughout the week. They are perfect for packing in lunchboxes, too. Hope you enjoy them!
