Vegetable Paella



This is a great summer dish chock full of vegetables! My mom actually found this recipe and made it when we came over for dinner this past weekend.


Vegetable Paella
serves 6, adapted from vegweb

1/4 cup olive oil
1 small onion, chopped
2 garlic cloves, diced
2 tomatoes, sliced into wedges
2 bell peppers, cut into strips (We used one red and one yellow)
1/2 cup thawed, frozen peas
1/2 cup cooked green beans
1/2 cup of cut broccoli
1 large portabello mushroom, cut into small pieces
3/4 cup uncooked long grain rice
1 cup of vegetable stock
pinch of saffron
chopped parsley
lemon juice

Fry the onion and garlic in a big, deep skillet with the olive oil. When it starts to wilt and turn yellow, add the cut vegetables and cook for about 10 minutes on medium heat. Add the rice and saffron.
Mix well and add the broth. Cook on low to medium heat stirring occasionally for about 20 minutes or until rice is cooked according to preferred consistency. Do not overcook, but add a bit of water if it gets too dry. Before serving add some chopped parsley and a squeeze of lemon juice.


Everyone really liked this dish! If you have meat eaters in your family like I'm sure most of us do, this is a good dish to make for a crowd because other people can add something else on top of it but everyone can still eat the same meal (and you don't have to feel like the loner grilling your veggie burger.)  :)

  1. This sounds delicious! I love paella but haven't had any in ages since I used to eat seafood. Yours is wonderful! Loving that it is chalk full of veg :)!

    I love making mac n cheez and roasted veggies or vegan lasagna when I am feeding all different types of people ;)

  4. Great Idea. Feeding a lot of people with vegan food is always such a big thing for me. I want them to understand that being vegan is an easy thing :) And also that our food is delicious! Your recipe sounds delicious!! I love to make some grilled quinoa with lots of veggies to feed a lot of people or sometimes I like to make a no-meat pâté (with tempeh!)

  5. I love that your mom made this for you! So awesome! And this paella looks amazing. I stumbled across a vegan version in Barcelona once (though, I can't for the life of me remember where this was- thank you, Sangria!), and it was so incredibly wonderful, I never attempted trying to top it. This looks like it would give that one a serious run for it's money! :-)

    1. I know, my mom is a great cook! I love finding amazing meals like that when I'm out of town, but it is pretty sad when you can't have it again. :)

  6. Thats so nice that your mom made this. Love the fresh flavors. I usually dont tell the guests whats in the dish if i make it. they know its vegan, but if i start taking names of veggies and greens, they are less likely to eat it:)

    1. Haha, awesome! I usually do that with baked goods. I just say "Here are some cookies, eat them!" and I don't get many complaints. :)
